It’s Guga’s favorite steak! There is a Brazilian grocery here in Columbus that sells it for $10.99 a pound.
I bought a 2.5lb slab and sliced it into 1.0 and 1.5lb steaks. The 1.5lb one went into the freezer.
24 hours prior to cook I dry brined the 1.0lb steak with my favorite rub on all sides. Leaving the steak in the fridge, I preheated my air fryer to 400 for 30 minutes (the time means nothing, ignore it). When the fryer was ready, I inserted my wireless thermometer and placed the steak in the fryer, fat cap on top. I set the thermometer alarm at 108. Yes, 108! When 108 hit, I pressed stop on the fryer and it continued to run to cool down for about 30 seconds, then I removed the steak. I rested it for 5 minutes for perfect medium rare.
