Best camera for adventure travel, post-processing?

I'm looking for recommendations for a camera to take along on my adventure travels, like Patagonia, Antarctica, ... Something I can put in my backpack that's not too heavy or bulky.

I want to take both stills and videos, mostly outdoors, of people, wildlife, and landscapes. Maybe with a 35-500 zoom? I would like to spend less than $10k, but may go higher if it makes sense.

I'm very partial to Canon, and bought one of the very first EOS-1D in the US 25 years ago. I used to be on top of digital photography, but now I'm completely lost.

I LOVE the AI Enhance process of my Google Pixel phone camera, but it's very slow. I would like a similar process on my fast desktop.
