Ice Cream can't be buffet'ed?

I've done sundaes automated where the ice cream was on buffets and it worked perfect. I'm on a cake run now and have ice cream as well, but the customers won't take the ice cream from a buffet? I also noticed you can't give them scoops from a bowl unless it's their EXACT order. Am I missing something or is this just how it is? If so that's pretty annoying.

I've been playing for a few months now, but know of the update to portioners on sinks. My question is, with the new mechanics, how do you automate spaghetti water draining into a sink? Is it literally not possible anymore? Seem weird if so because I know you could automate spaghetti 100% using combiners.
