I need a weekly signature for government compliance and not sure who to contact about it?

I am signed up for benefits from my state and part of my requirements (since I'm in school) is to get a signature each week for a log of the amount of hours I've spent "in class" (i.e. writing papers, researching, studying).

I've already contacted my academic coach, who responded with "I'm not the best person for this" and referred me to this email: documents@capella.edu

I emailed them and the Admissions and Records department responded back saying they can't do it basically.

I reached out to my current course professor and haven't heard back from him (it's been about 3 days).

If I can't get this weekly signature, I will be "penalized" and it could lead to a "sanction" and I will lose my benefits (SNAP, TANF). I wouldn't care as much if it was just me but I have two young children to care for. I am applying to jobs and have interviews this week but will still need these logs until told otherwise.

Does anyone have any advice (other than get a job, clearly), on who to contact about this?

Edit: My professor signed the log I sent him! Hopefully it’s good enough for my caseworker.

Received this email just a moment ago from Pasco County Schools. Instructure has been hacked today and has affected multiple schools across the nation. They don’t believe student information has been compromised.
