The prettiest loaf I've made yet!

  • 150g starter
  • 325g water
  • 20g honey
  • 20g EVOO
  • 500g unbleached flour
  • 10g salt

Mix all together, rest one hour, stretch and fold 4 times every 30 minutes, bulk ferment for ~8 hours, shape, cold proof 12-48 hours.

Preheat oven with DO inside to 500F. Once preheated, I pulled the loaf out of the fridge to design.

  • Lightly spray loaf with water. Blot with paper towel to remove excess water.
  • Use a circle stencil to sprinkle the poppy seeds on and press into place.
  • Lightly spray loaf with water again.
  • Using a tweezer, place each oat around the poppy seeds to make a flower.
  • Lightly score a grid between the flowers and add a deep score wherever your heart desires.

Load into preheated DO, cover, lower temp to 450F, bake for 30 minutes, remove lid, lower temp to 420F, bake for another 10-15 minutes, remove from DO and let cool for 2 hours before cutting.

If anyone can tell me why my big score looks so terrible, please help.
