Long-time B-12 deficiency, was just prescribed PPI's for gastritis??

Hello all, I've had low ferritin for almost 8 years. Finally got it treated properly with regular infusions starting 5 years ago. Since then, about 2 years ago, I found out I was also low in b12 and am on regular injections now. I'm still trying to figure out the cause of these deficiencies.

When I was first found to be low on B12, 2 years ago, I had a negative gastroscopy with biopsies of the stomach and duodenum for Hplori and celiac.

I recently moved so switched to new doctors and was referred to repeat gastroscopy. This time, they found "mild gastritis" of the fundus, along with 2 fundal polyps. This caught me off guard a bit, as I was just expecting it to be negative again. I have no noticeable symptoms that I can attribute to the gastritis, aside from the nutrient deficiencies. The general surgeon has advised me to take PPIs for a month now, and then in 8 weeks repeat the gastroscopy to see if the gastritis has resolved. I'm super confused by this, because I know that PPIs can be the CAUSE of iron and B12 deficiencies, which I already have a long history of. So, not sure if I should take these PPIs now, before we know what the cause of the gastritis is? (or if the gastritis is the cause of the low B12/iron?)

We are still waiting on pathology reports of the biopsies he took in the fundus and the other parts, and of the polyps, of the most recent gastroscopy

I'm also waiting for the appointment with hematology and GI that I was referred to.

This summer, I stopped injections for a few weeks, and my labs dropped from by over 100pmol to 190pmol within 6 weeks. My ferritin dropped by 60 as well in that timeframe. When I started injections again, it also took months to get my levels to 500 again, the highest I've ever gotten them on injections. My dr has me on them only monthly right now. Before, I did them every 3 weeks, but never got over 430 then either while I was training a sport 5 times a week. When I started injections again, my ferritin increased again, so I think the root problem might be B12?

Any advice on how to proceed would be super welcome. Or if anyone has had similar experiences, what your cause/treatment/etc. was.

I take no NSAIDS, don't drink, no drugs, no coffee, etc.
