


Bolognese-ish
My abomination of a bolognese, I’m sorry Italians.
Onion, carrot, celery, Bella mushrooms, cooked off in butter, a bit of read wine to deglaze and chicken stock. Lamb, pork, and spicy Italian sausage, all seared and added to the veggie mix to reduce with the chicken stock for about 45 minutes. Grated in a helping of fresh parmesiano reggiano, tossed in the noodles and finished till al dente.
