First time trying this. Here is what I have written down in case anyone wants to try my recipe. I used a smoke tube with wood pellets. Was very good.

Preheat the grill to medium and start a smoke tube if desired

On a clean working surface:

Weave the pack of bacon into a square, making sure to leave no gaps

Place deer loin onto the bacon, season all sides of loin with bbq dry rub

Roll the loin up in the bacon weave, making sure to tuck the ends in

Once complete, transfer to the grill and turn off all burners.

Center the loin over the farthest burner, so it runs parallel with the center of the burner

Turn that burner to medium low, and position the smoke tube on the opposite side of the grill.

Close the lid and keep it closed

Grill for 45 and flip.

After the first flip, experiment with 2 burners on low and the lid slightly cracked to get a good cook. 2 burners on low and the lid cracked 1" works very well.

Make sure to watch for flare ups!

Once meat is up to around 150, brush on bbq sauce cook one side at a time until glazed to your desired doneness. You could also crank the heat some to crisp up the bacon if it doesn't seem done enough.

I've never had deer meat taste like this before. I'm 36 and have been eating deer my entire life. Tonight was a game changer, for sure.
