My mom always cooked a lot and finding the recipes she used can be difficult. Years ago she made this shrimp salad with peppers. I guess typical shrimp salad is mayo based because that’s most of the recipes I see when I look for this - but this was not.
It was shrimp, different peppers (flavorful not really hot and likely not green bell pepper as I’ve never liked that), & herbs. I remember eating it cold and it was so simple and delicious. But I cannot find it.
Also it was definitely not ceviche, she made that a lot too.
Does this ring a bell with anyone? I’d appreciate any suggestions you may have.
