With smash patties, this is what "carnivore pancakes" are all about. Topped with butter and salt with little crispy edges. A total treat.
As beef prices continue to rise, finding ways to turn cheap cuts into magic has become a fun experiment, and I wanted to share this one with you.
Got 3lbs of beef cheek from Sam's club. Left it UNTRIMMED, because I actually enjoy the taste of animals, and seasoned with only salt and pepper.
Put it in the sous vide bath (double bagged) for 60 hours at 155 degrees.
Took it out, pat it dry, them straight into the smoker (I have a Ninja Woodfire, so it's like a compression smoker) for 1hr 45min at 225.
Wrapped it in foil with the contents from the sous vide bag to do a pseudo-confit and let rest for an hour.
Sliced it like a brisket and served it alongside eggs (fried in the fat rendered during the smoke) and a little bit of steak from my kid's plate. Really wanted to eat the full 3lbs: it's THAT good.
