I physically read and listen to the audiobook when I can’t do that. How sassy the Sibling sounds is just so fun to me! I love how Navani is talking to them as if The Sibling is a child who isn’t getting their way. Considering Navani raised two children with very different personalities, it’s no wonder she can handle the Sibling!

With how superficial Bea seems to have been, there’s no way Carl is anything less than a 7/10. I always imagine that he has the rugged, “I don’t care how I look” vibe to him which makes him even more attractive to a lot of people. I’ve only read up to 75% of Bedlam Bride, but I’m willing to put money on the idea that there were plenty of women who would’ve snatched Carl up if he wasn’t with Bea. I’m leaning towards an 8/10 and he becomes a solid 9 when he does something sweet for anyone.

First time doing inclusions and a whole year of baking (I’m not counting the one failed cinnamon sugar sourdough loaf I did lol)

480g bread flour

312g filtered water

120g starter (I actually used started that was definitely past peak but it still came out delicious)

10g salt

300g shredded part-skim,low-moisture mozzarella cheese

Mix water and starter together in a bowl

Add flour then mix until a shaggy dough forms

Start kneading with hands, wooden spoon, or dough whisk for about 5 minutes until the dough is less shaggy and a bit smoother

Rest for 30 minutes

Do first round of stretch and folds

Rest for another 30 minutes

Repeat 2 or 3 more rounds of stretch and folds with 30 minutes rest periods in between

Bulk ferment (time will vary based on your home temp.; mine took about 5 hours once stretch and folds were done)

Put dough on a lightly floured surface

Stretch dough into a rectangle

Apply some of the cheese along the dough leaving roughly a quarter of an inch of room around the edges

Take one of the shorter ends of the rectangle and pull into the center of the dough

Apply more cheese on this folded end

Do the same thing to the other shorter end of the rectangle

Roll the dough into a log-like shape and begin tucking and folding until a boule shape is formed

Bake immediately or cold-proof in fridge until ready to bake

When ready to bake, preheat oven to 450F

Score dough (I don’t recommend a fancy score for this as my fancy scoring was basically gone once fully baked)

Place in Dutch oven or baking vessel (parchment paper is highly recommended to prevent having burnt cheese all over your cookware or bakeware)

Bake for 45 minutes with the lid on and 15 minutes with the lid off

Note: My loaf is very heavy with cheese, so don’t expect a super crazy rise with this recipe. You can obviously use less cheese for a better oven spring if you want
