Say wind is 0 knots and you fly 100 knots gs - airspeed is 100 knots

When you fly into 20 knots headwind, you still move 100 knots relative to the body of air around you, but that air moves 20 knots gs in the opposite direction so gs is now 80 knots, right?

Like when you'd go 5mph on the street VS when you walk 5mph on a giant treadmill which moves with 2mph in your direction, now you're only making 3mph, right?
