What do you eat / recommend to eat after later in the evening adult ballet class?

Context, our adult classes don't get out until 8:30 or later (after getting dressed and out of the studio). I don't do dinner beforehand because I don't want to feel uggg/full during class. Do you have a "go-to" snack/light meal after class? What is best to focus: protein, carbs, etc? Of note, I don't stay up too late after getting home (9pm or later) and need to be in bed by 10pm.
