Incorrect fuel gauge, really bad mileage, or am I just that bad at math?

Took the bike out on a short trip to the next big town over for some stuff which is about 34 miles away 68 miles round trip, no big deal shouldn't have any issues and left with a full tank. Well about 14 miles outside of town coming back to my surprise, I look down and see that allegedly I barely have any fuel left with about 54 miles on that trip. Dash said I was getting around 60mpg, so with a 2ish gallon tank I should've had around a gallon left in the tank. Get back to town and fill the bike back up expecting almost 2 gallons to go in, but only put around 1.2 gallons in and the tank was full again, which I thought was pretty odd. Anybody have a similar experience or have heard of someone else having this issue?

Mods that I think could have any sort effect on this issue:

550 Performance Stage 1.0 91 Octane ECM

550 Performance High Flow Air Box Lid

CRFS Only Highflow Air Box Mod

DNA High Flow Air Filter

Graves Full Stainless Exhaust

HiVolt Motorsports Emissions Delete Kit

Stock tire mileage.

Kinda curious on what everyone was getting for mileage on their rear stock tire. I've got 2k on mine and already down to 4mm with 3mm being the minimum tread depth. For being a street tire made to look aggressive you'd think the tire would last more than 2k, but I guess it helps sell tires. I've heard some people got close to 4k on the rear and I'm not really sure if that's even possible.

I've looked around and can't seem to find anything about this possible bug. I'm stuck on the Va Fail, Elaine quest where you brew the trial of the grasses to use on Uma. I craft the brews and the quest item gets added to my inventory, but the quest stays stuck on "Gather the necessary ingredients and brew the decoctions of the Grasses". I've reloaded saves, I tried talking to lambert, yen, Vesemir and nothing happens

Had a bit of an incident with a ratchet strap getting worn through from my radiator guard and snapping last night. Thankfully the bike didn't fall off the carrier, just slammed against my tailgate and gave me time to stop. Was curious if anyone has used something similar to this picture as a tie down point? If so where up front do you have it mounted too?
