How many weeks out should I cut out certain things?

For context, I’m 7 weeks out from my first ever bodybuilding show, doing it self coached because I can’t financially afford a coach, I’m a natural and I’m 172 cm 59 kg currently and I’m planning to compete in figure. My stage weight will probably be 56 kg. My question is, to minimise bloating and gut irritation, in your experience, how many weeks out you cut out spices, sweeteners etc? Btw artificial sweeteners don’t have an effect on me, I’m not getting bloated but for the shake of doing things as best as I can, I think it would be beneficial for me to cut out a lot of stuff like seasonings, artificial sweeteners, 0 calorie sodas etc starting 3 weeks out. What’s your opinion on that?
