What is the best way to cool Garbanzo beans after cooking them, and still remain soft?

I'm making a big batch of vegan pasta salad at work in a couple weeks. I tried to cook them in a pot, once they were done I left them in the water to cool over night in the fridge. But then they got hard again over night. Any advice helps
