Vegetarian bibimbap

Ingredients:

- Jasmine rice

- Shiitake mushrooms

- Spinach

- Bean Sprouts

- Carrot

- Egg

- Gochujang sauce and sesame seeds.

Recipe:

Cook rice. Boil spinach and bean sprouts. Pan fry shiitake mushrooms, carrot and egg. Mix gochujang with honey, soy sauce, sugar and water.

Other: Muesli bar, Jazz apple, mandarin, date, boiled egg, Babybel cheese and grapes.

This is the food for my work day 7am - 4pm.

Been going for vegetarian lunches lately because I read that part in Sapiens where humans are cruel to animals, can't remember the exact reference. I still eat meat though.

Gochujang tofu and rice

Ingredients:

- Extra firm tofu

- Jasmine Rice

- Broccoli

- Coating: Cornstarch, flour, pepper, onion and garlic powder

- Marinade: Gochujang, honey, garlic, sesame oil.

- Toppings: Spring onions and sesame seeds.

  1. Freeze tofu and then microwave to thaw. This changes the texture of the tofu. Squeeze all the water out of the tofu.

  2. Toss the tofu in the coating.

  3. Spray oil on tofu and air fry for 15mins.

  4. Make marinade, put in pan on low heat and toss tofu in.

  5. Broccoli is just pan fried with garlic and soy sauce. Towards the end I add water then cover to steam a bit for the stalks to cook.

Been running around on site a bit so can't get back into the site office to microwave food. Hoping these quinoa burrito bowls can be eaten cold.

4 serves = $20 ($5 each serve).

\- 8 chicken thighs ($10).

\- 2 avocados ($2).

\- 2 tomatoes ($2).

\- 1/4 red onion ($0.50).

\- 1/2 jalapeno ($0.50).

\- 1/2 cilantro ($0.50).

\- 400g quinoa ($2).

\- 1/2 canned corn ($0.75).

\- 1/2 black beans ($0.75).

\- 1/8 chipotle sauce ($0.40).

\- 1/4 lime ($0.25).

Notes:

\- Vancouver, Canada Save On Foods has this deal where you can get 4 packs of meat for $20. Works out to be around $10/kg for boned chicken thighs.

\- Chicken thighs marinated with paprika, salt and pepper, cooked in air fryer for 20mins at 375°F.
