Found these at local fish market in UK. Have been wanting to try oysters but thought they were expensive. Would these likely be low quality? They were pretty big too in size

Hi there, been making my own raw cheese for a while, got some new glass jars and used same batch or raw milk I’ve been drinking, lightly covered by cloth, but the cream on top has turned brown? Any idea what’s gone on here? Also can I scrape it out and still use for cheese, or best to through away batch?
