Rate my setup - suggestions are welcome

Hello, I'm planning starting from scratch a new setup, I have been testing PVE 9.1 for a few months with an old computer. Now I bought new equipment to prepare the server for a long-term usage. The specs of my new homelab are:

  • CPU - intel i5-14500
  • GPU - MSI RTX 5070 SHADOW 2X
  • RAM - 2x DDR5 16GB-5600
  • MB - ASRock B760 Pro RS
  • NVMe - 2x KIOXIA 4TB Gen4x4 (For main Storage, VM OS) *RAID1*
  • SSD - Western Digital 1TB (For PVE boot)
  • HDD - 2x Seagate IronWolf 10TB (For Backups) *RAID1*
  • PSU - Corsair RM750e
  • CPU Cooler - Thermalright Phantom Spirit 120SE
  • CASE - JONSBO D32 PRO

My planned VMs are:

  • Home Assistant
  • Win11 (Gaming VM w/ GPU passthrough Running Apollo)
  • Debian13 (For dockers)
    • Immich
    • Pihole
    • passbolt
    • grafana
  • Proxmox Backup Server (Yes inside PVE)
  • OpenMediaVault (LXC)

I know it might sounds redundant to have the the backup on the same system but just to self peace of mind to have at least a backup on different type of media, I will plan later a offsite server to backup my files. The case only fits 2 HDD, but I think I can workaround that hiding the SSD somewhere lol.

Any suggestions and what do you think about my setup.
I also have a Dell micro qmc1250(intel i5-14500T,8GB RAM), it doesn't have any pcie expansion slot but i was wondering if I can use it for future offsite backup server OR leave it at home and use it for a firewall which is my next step to work on networking for my homelab, i'm not sure if I can use it as firewall since only has one 1Gb port.
