Easy sardine snack (with a glass of white wine!!)

A friend came over the other day, last minute, and we needed a little snack with our wine.
So it was a can of sardines in olive oil, took some of the olive oil and fried up the capers in it, fresh lemon juice and chives on some crackers. So easy and damn fine!!

First time baking an olive oil cake!

I've been meaning to try out an olive oil cake for some time so this is my first attempt at a basil and lemon one, with mascarpone frosting & basil sugar!!
I actually just asked AI for a recipe and was pretty happy with how it turned out. The basil sugar was such a nice touch - just castor sugar and fresh basil quickly blitzed in my blender.
Looking for some more olive oil inspired cakes if anyone has any good flavour combos to try?
