First shundo!

Messing around trading with my boys. Decided to look up oldest 1* and swap. Got my first shundo traded for a magmortar.

I have had starter a few months now. 50/50 u bleached flour and whole wheat flour . Some loafs are better than others but almost all have issue of not holding shape. I wait approximate times. Give or take 5 minutes. But it stays sticky and won't form well. Any ideas?
