I'm trying to select the right ice cream machine for starting a small business. The ice cream recipe is Philadelphia style, so I want a machine that will produce the right texture. Can I use a soft-serve machine, since I will be letting it harden in the freezer anyways? Any experience with machines that will be durable enough without costing an arm and a leg? Any advice helps, thanks!
