What are some summer street festivals that actually commit to their theme — vendors and all?

I’ve been to a bunch of street fests over the summers, and they’ve all started to blur together. Same vendor lineup, same vibe, regardless of what the fest is supposedly “about.”

The one exception I’ve been to: Burger Fest. It actually had a heavy focus on burger vendors, which made it feel meaningfully different from the usual hodgepodge.
