Several hours making into beef burgundy, I need to be out of my home when it was supposed to be done.. How to minimize impact to the dish as a whole?
Basically I started cooking a beef burgundy recipe earlier this morning and have had it braising in the oven for 2 hours. It's due to come out approximately 1 hour from now, but I will need to be away from home for about 35 minutes beyond that time. It has been braising at 325 and has been stirred occasionally. Is there something I can do to not impact the quality of the meal while having to be away for longer? Could I set it very low to account for the extra time? If it matters, I am using a Staub 5.5qt Dutch oven.
