I’ve done a lot of brisket but the first on the Traeger tailgater. Cooking much faster than anticipated. Whats the best way to rest it without it drying out. Usually wrap in butcher paper with tallow while resting. It’s a prime cut so I don’t want to ruin it! Only at 124 internal now but lunch is at noon and it’s 12:35 am now.
