Newish to the Japanese knife life. That being said I have dabbled in woodworking and am familiar with sharpening and tool maintenance... I was trying to look for a kurouchi style blade (not imitation, I hope), wa handle, but scrolling through thread after thread has kind of overwhelmed me. Unless someone has a suggestion of a knife shop in the DC area, I could use guidance on either a gyuto and petty knife recommendation or site I could start from --- preferably something that is also not sold out, which seems to be the other problem whenever I try and visit a shop online. As I'm newer, I'd like to avoid spending like 500 per knife (around 200 on the high end if possible). As I would be starting out, is there anything else I should account for beyond a gyuto and a petty knife?
