Help with substitutes for chocolate cake for one year old
Hi baker and scrunchy mums! I need some guidance. Bebe turns one this week 🥹 for a personal little cake for bebe to have on birth day, I am wanting to make a cake BUT sugar free. I figured maybe I could also do flour free? Bebe can eat flour, it’s not an allergy issue.
SO I am thinking of making a cake using sweet potato, beetroot, cacoa, and either dates or maple syrup for sweetener.
BUT I am unsure if I should add an egg and/or baking powder? I have previously made brownies with the ingredients mentioned above and while delicious, I find it quite ‘squiggy’ for want of a better word. I would like it a little more fluffy, hence the egg and/or baking powder consideration. Or would apple be an option? As I know apple sauce can be used as an egg substitute. Any thoughts?
I also found a recipe for frosting using sweet potato, cacao and maple syrup as bebe has a milk allergy so no cream cheese frosting 🥲 anyone have any other suggestions?
Thank you for any thoughts!
