Some of my stock parts isnt present in VAB/SPH

So i was building a Lander like usual but when i went to the payload section and went to search the “2.5m fairing” but cloudnt find it anywhere and i suspect other things might be absent too, can anyone help? Thank you in advance.

How do you actually rendezvous without it draining most of your fuel and end up not succesfully docking anyway. because when i am trying to do an apollo style mun mission the rendezvous/ascend part of the LM doesnt have that much fuel to match velocities! pls help me in doing this.
