How to relax during downtime?

Education is such a stressful field. I love it but it burns me out a lot. I feel like one reason for this is during downtime, incl both during the workday and after, my body and mind are still in work mode. My heart is racing, my mind is switching between thoughts rapidly, and I just generally feel like I'm moving around even when my body is still. I have slightly elevated blood pressure. All this made me think of making a sudden stop in a fast-moving car. Inertia keeps your body moving forward, and without a seatbelt you would go flying through your windshield. Metaphorically speaking, how do you keep the seatbelt firmly wrapped around you? How do you release the tension and transition into a resting state when you come home for the day?

I take classes while working too which doesn't help. I don't get much sleep or free time. I try but I just don't have enough hours in the day. I've been eating like crap recently, but im trying to figure out a way to have meals prepared even when im low on time so im not running off cheez-its, frozen burritos, and brownies.

Any advice would be appreciated.
