Super happy with how my first attempt at Vietnamese style soft spring rolls turned out. I essentially used this recipe from Healthy Nibbles and subbed pre-fried tofu triangles for the shrimp. I love them at restaurants and knew they couldn't be hard to recreate. They made a fun weeknight dinner and I didn't get any pushback from my picky kids which is always a win.
