Steak Flight
- American wagyu ribeye, dry brined 18 hours, pulled at 125°F, carryover to 132°F.
- Prime Filet, dry brined 18 hours, pulled at 115°F, carryover to 120°F.
- A5 Filet, pulled at 110°F, carryover to 112°F.
All seasoned with salt and reverse seared in 225°F oven. Dried with paper towel, rubbed with tallow then seared on 600°F stainless griddle, 45 seconds each side.
