Help Me with an Acacia Wood Butcher Block Desk Finish!

I wanted to build a desk using a 6 ft acacia butcher block counter piece from Menards. I did some research and from what I found I should sand it with 220, wet it to pop the grain, sand it again, clean it then put 3 or 4 coats of oil based poly finish on it. BUT when I talked to my Dad he suggested I use water based and use a sanding sealer before hand. What do you all think? I'm super new to this whole situation. Also I was thinking about doing a medium dark stain but also want to conserve the nice coloring of the butcher block. Help is appreciated!!
