Is anybody working/worked on an AI usecase in data engineering project.(Basic medallion architecture)

I am very new to AI and trying to learn AI with practical knowledge .

Just looking for some basic ideas to kickoff things and ultimately goal is to show my manager that I am doing something.

I have VS code with premium github copilot subscription
