What makes someone decide a lack of emotional or intellectual connection is a dealbreaker, even if the partner is kind and stable?

I’m really into this guy who disclosed that he has HSV2. We’ve been dating for a couple months and m get along well on so many different levels. We’ve fooled around but haven’t had sex yet. He says he takes his antivirals religiously and hasn’t had an outbreak in years.
I guess I have a couple questions here: what are the precautions we should take to limit likelihood of exposure to me, knowing it’s never 0%? Does me having HSV1/taking my antivirals help at all? I haven’t had an outbreak in a few years but have antivirals on hand if I need them. Is it realistic to be with someone long term and not get it?
