I'm a food product developer working on a high-protein RTD beverage formulation and I'm looking for spray-dried chicken breast protein powder. I've been using freeze-dried chicken breast powder but it creates significant graininess in the liquid matrix. Research suggests spray-dried would have better solubility and smoother texture.
What I'm looking for:
- Spray-dried (not freeze-dried)
- Chicken breast meat specifically (not mechanically separated or whole chicken)
- High protein content (80%+)
- Low fat (<5%)
- Fine powder (30 mesh or finer)
I've contacted several suppliers but most only offer freeze-dried or they produce from mechanically separated chicken with high fat content.Does anyone know of suppliers in North America or internationally who produce spray-dried chicken breast protein powder? Or have experience working with this type of ingredient?Any leads would be greatly appreciated!
