Lemon blueberry shortbread bars

Tried out a new recipe and it did not disappoint. I especially liked the blueberry curd, and I'm kicking myself for not making it sooner because it's absolutely delicious. Making a list of other ways to use it now 😄

My bars didn't turn out as nice as the recipe pictures but for a first try I'm happy with it! I think I probably should have let the curd set a little longer before cutting, but I was impatient 😬

My littlest baby turned 5 yesterday 🥹

Just wanted to share some pictures with other people who appreciate these babies 💗

Henry bring us so much joy and laughter every single day. I hope he knows how much we adore him. He's hilarious and ridiculous and loving and sweet. My little gremlin (or "grumlin" as my daughter calls him).

First pic is from last week, second pic from his bday last year, and the rest are just over the years including a couple baby pics and how he looked when we first got him.. he was funny looking and his little ears were still floppy 😄. I honestly wasn't sure if they'd end up standing but eventually they did!

Every time we go grocery shopping, my son asks for cookies and cream brownies. We've bought them a couple times and I'm entirely unimpressed. The brownie is more cake-like and just not very good. They're topped with the weird whipped frosting that leaves a film in your mouth.

So I decided to make my own, and by all accounts they were much better. I would definitely make them again. Although I wont be surprised if my kid continues to ask for the grocery store ones as well 😅
