Bootleg Chipotle bowl recipe that I have on repeat

I know pics are kinda uggo but the taste is *chefs kiss*

Recipe is approximately 430-500 calories and is super filling (about 50g protein, up to 15g fiber). Makes 5 servings

Options can be switched around but calories match the following:

Chicken:

2lbs chicken thighs marinated in mojo criollo or other marinade of choice

- Marinade for 1 hour at least, then pat dry and season with any dry seasoning you'd like (I typically do powdered chili and Julio's seasoning) any sort of Mexican food adjacent seasoning mixes will do, but watch for salt content!

- Pan fry in a hot pan with a small splash of oil. I like to get a sear on the chicken with a pan and then finish in the oven with the fajita veggies.

- Of course if you have a grill, that will always taste best

Fajita Veggies:

1 red bell pepper

1 green bell pepper

1/2 red onion

Salt/seasonings of choice to taste

- preheat oven to 400f

cut peppers and onion into thin, vertical strips

- for easier cleanup, lay parchment paper onto sheet tray

-place peppers and onions on pan and coat with a bit of oil (i just use whatever is left from the chicken pan bc im cheap)

- for seasoning, I'll usually use salt, Cumin seed, garlic powder, and salsa Macha (can be subbed for chili powder) as per the chicken any sort of seasoning can be used, but once again be warned not to add salt if your seasoning has salt in it!

- cook for 6-8 minutes, toss veggies and remove chicken if finishing in oven

- set oven to broil for another 3-5 min to get them crispy lookin

Bean and Corn Salsa

1/2 red onion diced finely

1 bag frozen corn kernels cooked per package directions

1 can black beans (rinsed)

1 Lime (juiced)

Cilantro chopped (if you can tolerate it)

Teeny tiny splash of red wine vinegar (optional)

Tajin (optional)

Small drizzle of nice olive oil (optional

- mix all ingredients well in a bowl taste and adjust if needed. Chill overnight for better flavor

Assembly

I usually pair these ingredients with a base of romaine lettuce (lower calorie) or brown rice with cilantro (yummy)

My bowl will also aaaalways include 5% fat fage greek yogurt or cottage cheese (I know) to sub for sour cream.

I also will add about a tablespoon of reduced fat Mexican cheese

Guac is also solid with these bowls but I was too lazy to make it this week (not included in my calorie approx.)

Found out that EBV caused my bladder illness (and valacyclovir fixed it)

I got mono real nasty 5 years ago. I experienced liver failure, needed surgery on my spleen, and was hospitalized for weeks. I had symptoms that followed for about 3 more months and then slowly started getting diagnosed with new fun chronic illnesses.

My biggest stressor now is my interstitial cystitis diagnosis. I have tried everything conventional and unconventional to treat this illness with no results. Out of desperation I found several studies linking the use of valacyclovir in treating IC in a subset of people that are affected due to reactivation of EBV.

My doctor heard me out and prescribed me valacyclovir 500mg and it WORKED. For the first time in 3 years I've felt relief. I know this is a weird one and I will cross post to the sub for interstitial cystitis but figured I'd put this out there for anyone with IC and persistent EBV.

The short and sweet of it is I've tried pretty much everything under the sun over the past 3 years and not only am I losing hope but so is every urologist I've seen.

Here's a comprehensive list of what I've tried

Gemtesa

Mirabegron

Elmiron

Amitriptyline

Hydrodistension

Instillations twice a week for 8 weeks (made it worse)

Hydroxyzine

Meclizine

Marshmallow root

D mannose

Pelvic floor therapy

Gabapentin

Uribel

Had laproscopy to rule out endo

Done elimination diet over months with slow reintroduction of foods twice now

And of course antibiotics

I have almost constant pain and frequency to the point that I struggle to work. And if stress makes it worse it definitely is now that i'm beginning to lose hope. I've seen countless urologists and the one I see now is the first who has been knowledgeable about IC, so i'm feeling concerned now that we've gone through every treatment option.

I currently still take elmiron, gabapentin, Hydroxyzine, amitriptyline, meclizine, and marshmallow root but see no relief from any of these.

Is there anything I haven't listed that has worked for anyone, or any advice on what my next steps should be?

I guess i should call it half finished since my cat chewed up my cable right after I finished the first sock... but I was too excited to not share

This is my second time knitting socks, first time going into it with an "I'll figure it out as I go" attitude. This poor sock has been frogged and ripped back more times than I could count. But I can confidently say I truly understand socks now.

These bad boys are a tribute to all moths so they maybe think twice before eating my finished projects. May moths and yarn kind find peace ✌️
