This is purely a theoretical question out of curiosity rather than a question about breaking the law.

Assuming you go through a border control check declaring all passengers but your actual ferry booking has one less - will you get questioned by the ferry operator at the ferry booth?

In theory the extra person could have come just to say bye and will return themselves back by bus.
