My experience is very subjectiv. But I work in a coffeeshop where we use 94/95C water temp for the espresso shots we pull. This is on a Slim Jim Leaver machine.

I personally have a Flair 58 at home. So far shots with the same beans matched at 89C temp the taste profile.

Does anyone have an idea what is causing 2 leaver machines to need such different temperatures for a similar taste profile? I use very similar pressure on my flair.
