I did a lot with this one. I had two chicken breasts that I needed to use, and so many veggies on the brink.
I seasoned the chicken and veggies in salt, pepper and a dash of peri peri salt. I put the chicken on a bed of red jalapeño, a white onion, red bell pepper, garlic, half a zucchini, and half a packet of cherry tomatoes. I’m eating in a calorie deficit rn so I used spray olive oil.
Once the veggies were roasted, I put them in the blender with half a jar of tomato sauce I needed to use up, a shitload of parsley (stalks and all) and chicken stock with water. I basically made a thick ass soup.
Just before the chicken was cooked to my liking, I took it out of the oven, added two portions of dried orzo back to the casserole dish with 2/3 of the sauce. I diced up the chicken and added it to the orzo once the pasta was 50% cooked. I (maybe controversially) blended the last 3rd of the sauce with low fat cottage cheese. I mixed it all together, grated some cheddar and cooked for a little longer to melt the cheese.
My only regret is I forgot I had opened a can of corn yesterday and it was in a tub in the fridge and I didn’t see it. That would’ve slapped. I also regret not incorporating some kind of bean situation. Eat your fibre, yall.
