Tried painted sourdough but it started to flatten/deform over time. I definitely took too long to paint it BUT I’ve seen some incredibly intricate designs that must take time.

Anyone tried and found the same? Any fixes?

Here’s what I did -
150g starter, 250g water, 25g oil, 10g salt. Mix, autolyse for ~1 hour. Stretch and fold every 30ish mins x4. Bulk rise at room temp for ~8 hours in banneton. Bulk ferment for ~14 hours in banneton
Took out of fridge, removed from banneton and started painting.

First 2 sourdoughs
Pic 1 + 2 - Plain sourdough
Pic 3 - Olive loaf (same base but added olives + rosemary during stretch and fold)

Any tips? First loaf was a bit dark and crumb a little denser than I’d hoped

Recipe:
150g starter, 250g water, 25g oil, 10g salt. Mix, autolyse for ~1 hour. Stretch and fold every 30ish mins x4. Rise at room temp overnight (10 hours or so). Cold proof for 10-12 hours. Bake 230°C (450°F) for 20 mins lid on Dutch oven, then 30 minutes lid off. Cool on drying rack for at least 2 hours before cutting.
