I was pretty set on going with B6s but in doing research I am seeing a ton of posts and reviews talking about how bad Bilstein quality is these days.

First, is this true? Have they really fallen off like this? If so, what other brands should I be looking for?

My intent is to stay with OEM springs to preserve the stock ride height. This car still goes on the dirt and snow on occasion and I want to preserve that ability. But I am looking for a firmer more planted ride in daily driving and more spirited runs.
