Allrounder knife recommendation

I’m currently doing most of my carving with a standard utility knife (Cutter Messer), but my thumb is absolutely in pain . The thin handle and the high pressure needed are becoming unbearable.

I want to move away from the rough cuts and really focus on mastering a clean knife finish 

Since I live in Europe, I need something I can easily buy online here. Here is what I’m looking for:

The Ergonomics: A comfortable, thicker handle to save my thumb.

The Scope: A good "all-rounder" knife to start with, even if I end up buying a full set later down the road.

Maintenance: I’m not super into heavy sharpening yet, so I need something that holds a keen edge well and is easy to maintain with just a leather strop.

Steel & Length: I'm a bit overwhelmed by steel types (Carbon vs. Stainless vs. Laminated). What steel type and blade length would you recommend specifically for achieving that clean knife finish?

Would love specific model recommendations for fine finish work).

Help: Technical Advice to Connect handle to a spiral neck

I’m currently working on this carving I want to add a separate handle to the spiral end maybe a bigger one than the feather .

The new handle would be slightly wider than the current piece. My plan is to drill a hole into the top of the spiral and carve a tenon on the handle to glue them together.

I need advice on the following:

  • How deep and wide should the hole and tenon be to ensure the piece doesn't snap in the middle?
  • How can I prevent the tenon from splitting the sides of the delicate spiral?
  • What is the "safe" wall thickness to leave around the hole so it doesn't burst?

or any other advice, i can change things.

Help, First time trying a knife finish how do I keep the wood looking fresh over several days?

I’ve been working on a piece for several days and want a knife finish for first time When I’m done, Yesterday the wood was nice and bright after carving, but today it looks dirty/dull again, like it hasn't been cleaned in years.

clean hands, I tried gloves, and to cover the piece when I'm not working on it, but it still happens. I know I could do a final pass with the knife before oiling, but I'm afraid of ruining the intricate scrolls and details.

Is this oxidation? How can I get the brightness back without risking the fine cuts? Any advice ?

How to make spirals accurate to each other next time ?

I tried taking the parallel to the previous upper line while working down on the spiral but still the places in between went somekind different, I would like to make them similar and perfect to each other next time like a stright pattern.
