Low maintenance travelers looking for advice

Wife and I want to go on a vacation. It’ll be our first alone since we had our first kid, so looking forward to it and wanting some advice. Trip will be about a week long this coming winter/early spring.

About us:

Late 20s

Bilingual (Spanish/English)

Enjoy a mix of all things on vacation- don’t want to just lay around the entire time, but don’t want to have a packed itinerary everyday

We enjoy prefer outdoor activities over indoor. We enjoy visiting churches, art, bars/restaurants, and scenery

Prefer local culture over an Americanized/touristy spot

Would like a Caribbean/Central America destination

<$125 or less per night for accommodation is ideal

Only non negotiable we have- No car rental necessary (walk/uber/taxi friendly area)
