How to learn wagashi making from professionals?
Several years ago, I watched a news segment about how traditional Japanese wagashi is made. The shop owner, possibly from Kameya Kiyonaga (https://kameyakiyonaga.co.jp/en/store.html, I don't remember...) mentioned how difficult it has become to find young people willing to learn the craft.
I’ve been deeply interested in learning to make authentic wagashi ever since. I’m Canadian, and I understand that mastering this craft takes years of dedication, early mornings, and consistent practice. I’m also aware that apprentice salaries can be quite low. However, I’ve saved enough and would truly value the opportunity to learn.
Does anyone know how I might contact a traditional wagashi shop or master to pursue an apprenticeship and learn this craft properly?
