




I smoked three racks of pork ribs on my Southern Q Limo Jr XT. It’s a 3 day process for me to make pork ribs.
Day 1: Rub the racks with my homemade dry rub. (1 part cumin, 1 part paprika, 1 part granulated garlic, 1 part granulated onion, 1 part chili powder, 3 parts dark brown sugar, 2 parts kosher salt, 1/3 part cayenne pepper, 1/3 part black pepper and 1/3 part white pepper).
Day 2: Soak the ribs in a slurry I make using 1.5 bags of dark brown sugar, half a jar of minced garlic, water and a little bit of olive oil.
Day 3: Throw them in the smoker.
I took the ribs up to an internal temperature of 195 before I pulled them and wrapped them to rest. Cook time was roughly 5.5 hours
Platted them with homemade potato salad and charro beans (bbq sauce is also homemade).
