I was making bagels for Saturday morning when I realised that its Thursday and I shouldn't have been making them until tomorrow, complete brain fade. They are already shapped and in the fridge...

The recipe I made called for an overnight cold proof but now they will be in there for over 40hours.

Will they be okay or will they be over-proofed messes and I should just start agian tomorrow?
