New sujihiki

I want to buy a sujihiki knife I was looking at this one in particular but went into Mtc kitchen and they showed me these as well. For reference I’m left handed hahaha so I really need 50/50 or to get it converted to left handed. I don’t want to spend more than $300 and it can’t be bigger than 240 mm so that it can fit on my cutting board. What do you guys think?

Be honest did I F up my knife

I’ve had this Carbon clad nigara hamono chef knife for awhile now. After a year of abuse in a professional kitchen and regular sharpening on stones the finish has started to come off. Should I bother to fix it?
