Any advice would be appreciated.

I graduated less than a year ago, and the agreement the university has with students is that their email and Microsoft account will remain open for 540 days. 2 weeks ago, I checked my email and couldn't get in. I thought it was weird and reached out to a couple of current and past students to see if any of them had issues. When only the former students had issues, I reached out to the university to address the issue. It took a couple of days and the IT guy told me that the university changed the policy that instead of 540 days, it was now 30 days. They then went on to confirm that the university did not send any warnings of this change and IT was overrun with past students reaching out to get this resolved, but transferred me to admissions who they said were resolving these issues. They took my information and said they would get back to me. Couple days later they emailed saying the period to restore my account was the week following it's closure and all my data had been deleted. That is literally every document from my PhD, every line of code I wrote, my zotoro and mendeley accounts, my biorender account, my power bi account, all of it.

Does anyone know of any options I can take at this point?

Edit: I should have included this in the main post. I did regular backups onto my university laptop. I am still working on manuscripts and doing some temp work work with my PI so I still have my uni laptop and have been working with the data. Without a uni email, I can't log in to the uni laptop.
