I's is not the possessive form of I. The word you're looking for is my/mine. You learned it when you were 3.
Yes, language is fluid, but I's is not the possessive personal pronoun. It's my/mine. In every case, it's my/mine.
I've even seen me's recently. WTF. Me's?
Context? Usually a dual possession situation. For example, "That restaurant is my wife's and I's favorite," instead of "my wife's and my favorite." Sounds a little clunky, but it's correct, and certainly less clunky than saying I's.
You'd probably say it one of many other ways just for ease of syntax ("it's a favorite for my wife and me," or just "it's our favorite,") but I's and me's makes you sound like a 2 year old.
